Singapore — The High Commission of India is showcasing seven regional biryanis in Singapore during the second Great Indian Biryani Festival, held May 11–24, 2026. The event offers an immersive taste tour of India’s culinary heritage with dishes from Hyderabad, Lucknow (Awadhi), Thalassery in Kerala, Delhi, Kolkata, and Tamil Nadu’s Dindigul and Ambur regions.
Organisers say the festival is intended to present different facets of “Incredible India” to Singaporean diners and visitors, deepening cultural ties and inspiring travel. “I am sure that the taste of renowned Indian biryanis will motivate them to know more about India, to visit India and thus, contribute to bringing both sides even closer,” said Indian High Commissioner Shilpak Ambule.
Guests at the opening praised the aromatic spices, layered flavours and regional techniques that distinguish each biryani. Matthew Bennink, Director of Food and Beverage at Shangri‑La Hotel Singapore, said: “Every biryani tells a story of its region, history and culture.” He added that the launch day’s response had been “extremely encouraging,” and that diners appreciated the craftsmanship and heritage behind each preparation.
The specially curated menu uses authentic regional recipes and traditional cooking methods prepared by guest chefs from Shangri‑La Singapore, Shangri‑La Eros New Delhi and Shangri‑La Rasa Sentosa. Organisers, working with local hospitality partners, reported strong participation from food lovers across the city‑state.
Running through May 24, the Great Indian Biryani Festival gives visitors a chance to sample seven distinct regional varieties and learn about the culinary traditions and stories that shaped them.
